- 2 lemons, juiced
- 3 tablespoons maple syrup or honey
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 2–3 tablespoons extra-virgin olive oil
- 4 cups mixed baby greens, arugula, and microgreens (as available)
- 1 cup English cucumber, thinly sliced
- ½ cup roasted sunflower seeds or toasted pecans (optional)
Preparation
Mix lemon juice, syrup/honey, salt, and pepper and whisk in oil. Combine with salad just before serving.
