Salad Greens with Lemon Dressing

Ingredients

  • 2 lemons, juiced
  • 3 tablespoons maple syrup or honey
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2–3 tablespoons extra-virgin olive oil
  • 4 cups mixed baby greens, arugula, and microgreens (as available)
  • 1 cup English cucumber, thinly sliced
  • ½ cup roasted sunflower seeds or toasted pecans (optional)

Preparation

Mix lemon juice, syrup/honey, salt, and pepper and whisk in oil. Combine with salad just before serving.
