One-Pot Dinners

For me, the transition into fall signals that it’s time to put more focus on togetherness and preparing dinners that don’t just fill up our bellies, but our hearts too. My favorite way to bring this sentiment to life is the one-pot wonder. Transfer the cooking vessel straight from the stove top to the dinner table and let everyone help themselves for a heartwarming communal experience.

I’ve put together three of my favorite meals to serve when I’m in that cozy-up-around-the-table kinda mood: warm and comforting curry packed with veggies; shrimp swimming in a sauce so good you’ll want to slurp up every last drop; and a fall-inspired risotto featuring butternut squash, my favorite seasonal vegetable.
