Freezing Tomatoes

Crushed

Wash and peel tomatoes. Slice into quarters and add to large pot. Crush with wooden spoon. Heat and stir until boiling. Simmer for 5 minutes. Place bowl of sauce in ice water to cool.

Fill containers leaving 1 inch space at the top. Add ¼–½ teaspoon salt to mixture. Cover and freeze up to 6 months.

Whole (with no liquid added)

Wash and peel tomatoes.

Fill containers leaving 1 inch space at the top. Add ¼–½ teaspoon salt to mixture. Cover and freeze up to 6 months.

Whole (with water added)

Wash and peel tomatoes. Add tomatoes to a pot and cover with water; heat. Simmer for 5 minutes. Place pot of tomatoes in cold water to cool.

Fill containers leaving 1 inch space at the top. Add ¼–½ teaspoon salt to mixture. Cover and freeze up to 6 months
