Eat the Rainbow

They say presentation is everything. I agree! Sitting down to a delicious meal is great, but my eyes need to be wowed as well. I want to see a rainbow of colors on my plate. Eating the rainbow throughout your day is one of the greatest gifts you can give yourself and your family. By increasing the variety of color in your diet, you supply an array of vitamins, minerals, and phytochemicals to benefit your health. Different-colored plants are linked to specific nutrients and health benefits: Red foods can reduce sun-related skin damage; yellow or orange supports eye health; green can lower the risk of cancers; blue or purple can lower the risk of diabetes; and all the colors of rainbow are helpful in lowering the risk of heart disease. Eating these fruits and vegetables when they are in season will deliver even greater nutrition. Try adding a few colors to each meal throughout the day. Local farmers’ markets are a great place to find the freshest fruits and vegetables each season.
