Lemon Basil Cookies

Ingredients

  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter (soft)
  • 3/4 cup sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • Zest from one lemon
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped basil

Preparation

Preheat oven to 350 degrees

In a medium bowl, add flour, baking soda, cream of tartar, cornstarch, and salt. Whisk to

combine. Set aside.

In the bowl of an electric mixer, add butter and sugar. Cream butter and sugar together until light and fluffy, 3–4 minutes. Add the egg and mix together on low until fully combined.

Next, stir in lemon juice, zest, and basil.

Add the dry ingredients and mix until combined.

Form cookies by using a large cookie scoop and place them on a parchment-lined cookie

sheet. (Cookies will spread when baked, so space generously.)

Bake cookies for 13–14 minutes.

Yields 8 large cookies.
