- 8 ounces cream cheese
- ½ cup sliced green onions
- ½ cup shredded cucumber (seeds removed)
- 1 teaspoon minced garlic
- 3 teaspoons lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4—6 slices 5-grain Italian bread
- 1 pound assorted heirloom tomatoes, sliced
Preparation
Preheat oven to 425°F.
In a bowl, mix together the cream cheese, green onions, shredded cucumber, garlic, lemon juice, salt, and pepper.
Place slices of bread on a sheet pan and place into the oven for 5 minutes, or until toasted.
Spread cheese mixture onto bread slices; top with sliced tomatoes. Garnish with a drizzle of olive oil, salt, and pepper.
