Chewy Double Chocolate Cookies

Ingredients

SERVINGS: Makes about 2 dozen cookies
  • 12 ounces semi-sweet chocolate chips
  • ½ cup unsalted butter, plus more for greasing parchment
  • 4 large eggs
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon fine salt
  • 10 ounces bittersweet chocolate chips
  • Confectioners sugar, for decorating

Instructions

  1. Combine semi-sweet chocolate chips and butter in large bowl set over a pot of simmering water. Melt chocolate and butter, stirring, until smooth. Remove from heat and cool slightly.
  2. Combine eggs, both sugars, and vanilla in medium bowl. Whisk until homogenous. Pour into chocolate mixture and whisk to combine.
  3. Combine flour, baking powder, and salt in medium bowl. Add to chocolate mixture, folding to combine. Fold in bittersweet chocolate chips. Refrigerate dough for 1 hour.
  4. Heat oven to 350°. Line baking sheets with parchment and grease paper. Portion dough into 2-tablespoon balls and place on prepared baking sheets, spacing 2 inches apart.
  5. Bake until set, about 12 minutes. Let cool on baking sheets before transferring to wire rack to cool completely. Dust with confectioners sugar, if desired.
