Ingredients
- ½ cup sugar
- ½ cup water
- 1½ cups aged rum, the older the better
- 1 cinnamon stick, 1–2 ripe bananas
- 5 shakes orange bitters
- Pinch of salt
- Peel removed from 1 lemon
- 1 lemon, sliced
- 4–5 sprigs fresh rosemary
- 1 cup boiling water
- 4 ounces dry ice
Preparation
Combine the sugar and water in a small saucepan and simmer, stirring, until sugar is completely dissolved. Add to a large jar or container along with the remaining ingredients. Shake lightly to combine ingredients and refrigerate 24–48 hours. Strain through a very fine sieve into another jar or container and freeze until ready to serve. To serve: Pour 1½ to 2 ounces of Rum Old Fashioned into the largest wine glasses you have and prepare the Lemon Rosemary Cloud.
Place lemon, rosemary, and water in large pitcher or beaker-shaped container and add some of the dry ice. The cloud will immediately form and last until the dry ice evaporates. Pour cloud only (do not pour out any of the lemon rosemary water!) into glasses to create an amazing sensory experience for the eyes and nose. Add more dry ice to the lemon rosemary water as needed.
