Watermelon Hibiscus Margarita
Beth FoxNothing says refreshment on a hot summer day quite like watermelon. Here, we’re giving the classic margarita a little extra pizzazz with a homemade hibiscus syrup that brings both vibrant color and a floral twist. I like to finish this one with a sugared rim mixed with tajin for that perfect sweet-heat kick. These measurements are for 1 cocktail, but go ahead and multiply it if you’re mixing it for more—just keep the balance right.

Servings 2 -4 drinks
Ingredients
- 2 ounces tequila
- ½ ounce orange liqueur
- ½ ounce hibiscus syrup
- 1 ounce freshly squeezed lime juice (Yes, it has to befresh!)
- 2 ounces watermelon juice (You can purchase this but I just juice my own in the juicer or you can purée it in the blender and strain.)
For the Hibiscus Syrup:
- ½ cup water
- 1 hibiscus tea bag
- ½ cup sugar
Instructions
To make the cocktail:
- Shake all the ingredients with plenty of ice in a cocktail shaker, then pour over crushed ice or a single oversized cube or sphere—your drink will stay colder longer and look sharp doing it.
To make the hibiscus syrup:
- Steep the tea bag in boiling water for 5–7 minutes; remove tea bag and simmer with sugar until dissolved. Store extra in the fridge.
