
Thai Peanut Chicken

This Thai Peanut Chicken brings bright, exotic flavors to the table and is a recipe you’ll be glad to have leftovers of! It’s very flexible for the home cook—use chicken thighs for extra richness like I did or use chicken breasts instead if you prefer. You can also add vegetables like broccoli or bok choy and serve it over any rice or noodle variety you may have on hand. Adjust the spice level to your taste by adding some chili crisp or red pepper flakes and remember that the fresh herbs make the dish as beautiful as it is flavorful. Ingredients
- 2 pounds chicken thighs cut into bite-sized pieces
- 1 egg white
- 2 teaspoons cornstarch
- ¼ cup freshly squeezed lime juice
- ½ cup soy sauce
- 2 teaspoons honey
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger root
- 2 cloves garlic minced
- ½ cup neutral high-heat oil
- 1 onion sliced
- 2 red bell peppers sliced
- Cooked rice or noodles
- ½ cup roasted peanuts
- 3–4 green onions finely chopped
- ½ cup assorted fresh herbs like mint basil and cilantro, torn or chopped
Instructions
- Combine chicken, egg white, and cornstarch and allow to rest at least 30 minutes. Meanwhile, make the sauce by combining and mixing well the lime juice, soy sauce, honey, sesame oil, ginger, and garlic. Set aside; can be made a day ahead and stored in the refrigerator.
- Heat a large skillet and add the neutral oil, adding the chicken when the oil is sizzling. Cook the chicken pieces until they are a deep dark brown color for maximum flavor. You may need to do this in batches. Remove from pan when done and set aside on a plate. Add onion and peppers to pan and stir until wilted. Return chicken to pan and mix together, adding the sauce and continuing to mix well.
- To serve, mound rice or noodles on your serving dish and top with the delicious chicken mixture. Sprinkle with peanuts—green onions and fresh herbs, and enjoy!
