
Roasted Strawberries with Whipped Farmer Cheese
Since no spring table is complete without something sweet, roasted strawberries with whipped farmer cheese round things out—soft, jammy fruit paired with a creamy, lightly tangy finish.

Ingredients
- 1 pound fresh strawberries
- 1 tablespoon white balsamic vinegar
- 1 tablespoon olive oil
- 2 tablespoons honey (divided)
- 1 pinch of salt and pepper
- 7½ ounces farmer cheese
- 3 tablespoons heavy cream
- 1 teaspoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 fresh baguette
Instructions
- Preheat oven to 425 degrees F.
- Remove green tops from strawberries, then slice berries in half.
- In a mixing bowl, combine white balsamic vinegar, olive oil, 1 tablespoon honey, salt, and pepper. Add strawberries to bowl and stir until fully coated. On a baking sheet, place strawberries cut side down spaced so they are not touching.
- Roast berries for 5–7 minutes. Remove from oven when they just start to soften and release a small amount of liquid.
- In a food processor, combine farmer cheese, heavy cream, lemon, juice, salt ,and pepper. Process until cheese mixture is smooth.
- Spread cheese mixture onto a slice of the baguette; top with roasted strawberries and a drizzle of honey.
