Roasted Strawberries with Whipped Farmer Cheese

Since no spring table is complete without something sweet, roasted strawberries with whipped farmer cheese round things out—soft, jammy fruit paired with a creamy, lightly tangy finish.

Ingredients
  

  • 1 pound fresh strawberries
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons honey (divided)
  • 1 pinch of salt and pepper
  • ounces farmer cheese
  • 3 tablespoons heavy cream
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 fresh baguette

Instructions
 

  • Preheat oven to 425 degrees F.
  • Remove green tops from strawberries, then slice berries in half.
  • In a mixing bowl, combine white balsamic vinegar, olive oil, 1 tablespoon honey, salt, and pepper. Add strawberries to bowl and stir until fully coated. On a baking sheet, place strawberries cut side down spaced so they are not touching.
  • Roast berries for 5–7 minutes. Remove from oven when they just start to soften and release a small amount of liquid.
  • In a food processor, combine farmer cheese, heavy cream, lemon, juice, salt ,and pepper. Process until cheese mixture is smooth.
  • Spread cheese mixture onto a slice of the baguette; top with roasted strawberries and a drizzle of honey.
