Strawberry Cookies

Ingredients
  

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter (soft)
  • 3/4 cup sugar
  • 1 large egg
  • 4 tablespoon strawberry powder*
  • 1/4 cup dehydrated strawberries
  • 1/2 teaspoon red food coloring (optional)

Instructions
 

  • Preheat oven to 350°F.
    In a medium bowl, add flour, baking soda, cream of tartar, cornstarch, and salt. Whisk to
    combine. Set aside.
    In the bowl of an electric mixer, add sugar and butter. Cream butter and sugar together until light and fluffy, 3–4 minutes. Add the egg and mix together on low until fully combined.
    Next, add strawberry powder, roughly chopped dehydrated strawberries and food coloring to
    mixing bowl. Mix until combined.
    Add dry ingredients to mixing bowl. Stir until it comes together and there isn't any white left. Be
    careful not to over mix.
    Form cookies by using a large cookie scoop and place them onto a parchment-lined cookie sheet. (Cookies will spread when baked, so space generously.) Chill for at least 30 minutes.
    Bake for 14–16 minutes.
    *Use a food processor to turn the dehydrated strawberries into a powder.
    Approximately 0.7 ounces of strawberries is needed for 3 tablespoons of powder.
    Yields 8 large cookies.
