Lentil Walnut Tacos

Lentil Walnut Tacos

Ingredients
  

  • ½ cup diced onion
  • 1 tablespoon olive oil
  • ½ cup finely chopped walnuts
  • 2 tablespoons tomato paste
  • 2 cups prepared lentils
  • ¼ cup water
  • 2 tablespoons lime juice
  • ¼ cup chopped cilantro
  • Tortillas

Seasoning Mix

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon marjoram
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon black pepper

Instructions
 

  • Prepare lentils according to package instructions.
    In a skillet, sauté onions in olive oil until they are translucent. Add walnuts and tomato paste; continue to cook for 1 minute. Add prepared lentils and stir.
    Next, add water, lime juice, and seasoning mix. Stir well, cook for 1—2 more minutes. Remove from heat. Add chopped cilantro. Serve with your favorite tortillas.
