Heirloom Tomato Sandwiches

Heirloom Tomato Sandwiches

Ingredients
  

  • 8 ounces cream cheese
  • ½ cup sliced green onions
  • ½ cup shredded cucumber (seeds removed)
  • 1 teaspoon minced garlic
  • 3 teaspoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4—6 slices 5-grain Italian bread
  • 1 pound assorted heirloom tomatoes, sliced

Instructions
 

  • Preheat oven to 425°F.
    In a bowl, mix together the cream cheese, green onions, shredded cucumber, garlic, lemon juice, salt, and pepper.
    Place slices of bread on a sheet pan and place into the oven for 5 minutes, or until toasted.
    Spread cheese mixture onto bread slices; top with sliced tomatoes. Garnish with a drizzle of olive oil, salt, and pepper.
