Heirloom Tomato & Cucumber Salad With Dill Yogurt Dressing

Summer in its simplest and freshest form!

Ingredients
  

  • 2 cloves garlic, minced
  • ½ cup fresh dill, finely chopped
  • Salt and pepper to taste
  • 2 tablespoons freshly squeezed lemon juice
  • 1 cup Whole Foods Market organic Greek yogurt
  • 2 tablespoon olive oil
  • 2–3 pounds ripe heirloom tomatoes (they look funny but they taste the best!), sliced
  • 1–2 organic English cucumbers, thinly sliced

Instructions
 

  • Combine first 6 ingredients in a bowl and, if possible, let sit in the refrigerator overnight to allow the flavors to marry. Arrange the sliced tomatoes and cucumbers decoratively on a platter, season with salt and pepper if desired, and serve with the dressing on the side.
