Dutch Baby with Lemon Curd and Berries

Ingredients
  

  • 3 tablespoons butter
  • 3 eggs
  • ½ cup flour
  • ½ cup milk
  • 1 teaspoon vanilla
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 1 cup lemon curd
  • 1 cup mixed berries
  • 1 tablespoon powdered sugar (optional)

Instructions
 

  • Heat oven to 425 degrees F.
    Place the butter in a 10-inch oven-safe skillet and place in oven until the butter melts.In a blender, add eggs, flour, milk, vanilla, sugar, and salt. Blend for 1 minute, then pour mixture into the preheated skillet and return it to the oven. Bake until puffed and golden brown, about 15–18 minutes.
    Let cool until the puffing goes down, then fill with the lemon curd and mixed berries. Top with powdered sugar.
