
Grapefruit Posset

Ingredients
- 2 cups heavy cream
- ½ cup sugar
- 5 tablespoons fresh Ruby Red or pink grapefruit juice,
- from 1 grapefruit
- 1 tablespoon fresh lemon juice
- 1 pinch sea salt
- ½ cup grapefruit segments, from 1 grapefruit
- Finely grated zest of 1 grapefruit
- 1 tablespoon turbinado or sanding sugar
Instructions
- Combine the cream and sugar in a medium saucepan.
- Bring to a gentle boil over medium heat, stirring until the sugar dissolves. Once boiling, let simmer 3 minutes exactly. Remove from heat and stir in the grapefruit juice and salt.
- Let stand 10 minutes to slightly thicken. Pour into small glasses or ramekins.
- Chill uncovered until fully set, at least 4 hours or overnight. Before serving, combine zest and sugar in a small bowl.
- Top each serving with a couple segments of grapefruit and sprinkle with zest-sugar mixture.
