French Baked Eggs with Arugula & Feta

Makes 1 serving

Ingredients
  

  • 1 teaspoon butter
  • 2 large eggs
  • Salt and pepper, to taste
  • 2 tablespoons heavy cream
  • 2 tablespoons crumbled feta
  • Handful baby arugula
  • 1 sprig fresh thyme

Notes

Buttered toast points
Heat oven to 350 degrees. Generously butter a ramekin, small gratin dish, or cocotte. Crack both eggs into the buttered dish. Season with salt and pepper. Pour cream over the eggs. Top with cheese and arugula. Cover tightly with aluminum foil, or lid if using a proper cocotte. Bake covered for 10 minutes. Remove foil or lid and bake uncovered until eggs are set to your liking, about 5 minutes. Top with thyme and serve immediately with toast.
