Clarified Pina Colada

Clarification is a technique that transforms a typically creamy cocktail into something crystal clear and striking. A classic piña colada is rich and cloudy thanks to coconut cream, but in this version we keep all the tropical flavor you expect while removing the solids for a silky smooth, see-through showstopper. It takes a bit of time and planning—but, trust me, it’s worth it. Since this might be a new method for some, I highly recommend watching my reel—just scan the QR code to check it out. Since clarification takes a little time and patience, go ahead and make the full batch; it’s just as easy and Future You will be very pleased when you have extra in the fridge!
Makes 2-4 Drinks

Ingredients
  

  • 4 cups pineapple juice (I juice my own but you can use bottled here.)
  • 2 cups white rum
  • 1 cup freshly squeezed lime juice (Only fresh!)
  • 1 cup canned coconut cream
  • 1 cup whole milk

Instructions
 

  • Combine all ingredients except whole milk in a container and shake until combined. Add the milk and shake well to combine. Allow to sit on the counter for about an hour, until the mixture coagulates—this is where the magic is happening! Next, strain it through a coffee filter set in a strainer and over a receptacle. This process takes about 8 hours total so be patient. You’ll only be able to strain part of the mixture at a time since it won’t all fit in the coffee filter at once. Just leave the rest in the fridge while it waits its turn—sometimes I even let it strain overnight in the fridge if I’ve got the space. Discard the solids in the filter and enjoy the Clarified Piña Colada over ice and with a garnish of lime, pineapple, or fresh mint.
