
Blueberry Parfait
Makes 1 parfait, plus extra granola
Ingredients
- 1 tablespoon butter
- ½ cup rolled oats
- ¼ cup chopped pecans
- 1 heaping tablespoon honey Pinch salt
- 2 tablespoons blueberry jam (see Note)
- 1 cup Greek yogurt sweetened to taste
- ¼ cup blueberries
Notes
To make a quick granola topping, melt butter in a small skillet. Add oats and nuts, stirring until lightly toasted. Turn off the heat. Add honey and salt and stir to combine. Let cool.
Just before serving, swirl blueberry jam into yogurt. Layer the parfait in a serving dish with blueberry-yogurt swirl on the bottom, then granola and blueberries on top. Garnish with edible flowers, if desired.
NOTE: You can use store-bought blueberry jam or make your own by simmering 1 cup blueberries and 1 tablespoon honey in a small saucepan. Stir and smash occasionally, until cooked down, about 10 minutes.
