Chef Fabio Viviani has had the kind of career most chefs only dream about. Since capturing America’s attention on “Top Chef”—where his infectious personality, effortless charm, rugged good looks, and unmistakable Italian accent earned him “Fan Favorite” honors during Season 8—he has transformed television fame into something far more substantial. Equal parts entertainer, entrepreneur, and restaurateur, Viviani has blended his charisma with an Old-World Italian work ethic to create a culinary empire that’s as welcoming as it is successful.

One of our favorite stories traced his unlikely journey from Florence, Italy, where he was born and raised, to America in 2005. At just 28 years old, he made the bold decision to sell his burgeoning hospitality business in Italy and start over in Malibu.

“‘Baywatch,’” he deadpanned, sending the room into a wave of laughter. Apparently, the promise of California sunshine—and perhaps the chance to be rescued by Pamela Anderson while sporting a Speedo—was all the convincing he needed.
Reality, of course, looked a little different. “I didn’t understand a word anyone was saying until 2008,” he joked, perfectly capturing both the challenge and humor of beginning a new life in a foreign country. Before long, Malibu proved a little too quiet for someone with Fabio’s relentless energy, so he launched a consulting business, helping aspiring restaurateurs across America bring authentic Italian restaurants to life. As history has shown, that was only the beginning.
One of the evening’s highlights was Fabio’s demonstration of how to make fresh mozzarella. While he certainly wanted to teach us the technique, there was another agenda lurking beneath the stretchy curds. By the time he’d pulled, folded, and wrestled with the cheese, we all had a newfound appreciation for just how much work goes into producing a perfect ball of mozzarella. In other words, it was his not-so-subtle way of saying, “See what a pain in the ass this is?” (He did say that.)

The payoff, however, will soon be worth it. Taverna Toscana plans to have servers prepare fresh mozzarella tableside, transforming what could simply be an appetizer into an experience—and after seeing the process firsthand, we can’t imagine enjoying it any other way.
Fabio also shared a philosophy that perfectly sums up both his approach to food and to life: “Culinarily speaking, you have to try everything at least once before you are allowed to dislike it.”
It’s advice worth taking, especially at Taverna Toscana, where every dish reflects his passion for authentic Italian cooking and genuine hospitality. While you may not always find Fabio himself walking the dining room or cracking jokes from the open kitchen, his fingerprints are unmistakably everywhere—from the impeccable, welcoming service to the irresistible food arriving at your table.
