Spring is here and it’s time to celebrate longer days at the beach, later sunsets, warmer evenings under the stars, and the vibrant and soul-satisfying food that comes with this rejuvenating change of season. No meal encapsulates the cheerful feelings of spring quite like brunch. Brunch signals a celebration and spring is the perfect time to bring out the most colorful and party-worthy recipes. This brunch menu has a little bit of everything: seasonal-veggie-packed gluten-free pancakes, a bright and nourishing salad, indulgent and rich French toast, and an updated version of the classic eggs and crispy potatoes for all the farmhouse breakfast enthusiasts (that’s me!).
