Flourishing Florida Food Blogger, Nicole Coudal dazzles with MyDeliciousBlog.com

Nicole Coudal wants her culinary adventurers to inspire readers—to get them into their kitchens, get creative, and get cooking.

That’s what makes her happy, and that passion carries over to her followers at MyDeliciousBlog.com—an online venture that evolved organically for Coudal after a pivotal career switch.

In 2014, Coudal (who is originally from New England and now lives in Southwest Florida) left her 25-year profession as a human resources executive.

“I guess I took an early retirement of sorts, getting off the fast-paced schedule of working for demanding companies, and wanting to focus on creative endeavors alongside my artist husband,” Coudal says. “But when asked what exactly I was going to do, I had a difficult time answering. What I knew for sure was that it would have to be something that involved food, because that brought me joy and gave me purpose.”

Her friends and family suggested that she write a food blog. So Coudal enterprisingly taught herself WordPress, dusted off her photography skills, and launched MyDeliciousBlog in June 2015. On it Coudal shares her favorite dishes—ones often packed with local ingredients like Gulf seafood and seasonal, homegrown produce.

“I love to prepare fresh fish (ideally, ones I’ve caught myself). My favorite method is to simply pan-sear the fillet and top it with compound butter flavored with fresh herbs and citrus zest, and serve it with a fresh fruit salsa or green salad (ideally, using ingredients from my own garden),” Coudal says. “In Florida, it doesn’t get easier or more delicious than that.”

A few of Coudal’s other cherished recipes include comforting meatloaf with mashed potatoes, crispy chocolate chip cookies, and tourtiere from her Canadian heritage.

Beyond making food, Coudal is also into making merchandise. In 2019, she started selling products on her blog: kitchen towels made of 100 percent cotton and heavy-duty flour sack material (part of the Delicious Dry Goods™ brand, which she plans to expand into tote bags, napkins, aprons, and more). When the pandemic hit, Coudal even partnered with a local seamstress to repurpose her towels into masks.

Coudal always finds a way to innovate—whether by expanding her business or keeping her writing fresh.

“There are many food writers, Instagram darlings, restaurant commentators, and critics out there. What’s different about me is that I create original content based on what inspires me, which is pretty much everything,” Coudal says. “There’s an actual person behind each blog post and recipe—one who loves to cook, tries to inspire others to get excited about the possibilities, and has a little fun along the way.”
