Preparation

1. Combine jalapeño, cilantro, onion, garlic, vinegar, lime juice, mustard, and egg yolk in a blender. Blend until puréed. While blender is running, add oil in a thin stream. Season to taste with salt.

  • ½ cup fresh cilantro, chopped, stems included
  • ¼ cup chopped onion
  • 2 cloves garlic, peeled
  • 2 tablespoons jalapeno vinegar, from canned jalapenos
  • 1 tablespoon lime juice
  • 1 tablespoon Dijon mustard
  • 1 egg yolk
  • 1 cup canola oil
  • Salt, to taste
