- ¼ cup honey
- 2 tablespoons apple cider vinegar
- 1 teaspoon cumin
- 1 teaspoon sweet paprika
- 1 pound boneless, skinless chicken breast, cut into 2-inch chunks (12 pieces)
- 6 slices bacon, halved crosswise
- 6 large jalapeños, halved lengthwise and seeded
- Wooden skewers soaked in water for 30 minutes
- Kosher salt and freshly ground pepper
Preparation
Heat grill to medium-high. Combine honey, vinegar, cumin, and paprika in small bowl. Wrap each piece of chicken in bacon. Thread chicken and jalapeños onto wooden skewers and season with salt and pepper. Brush skewers with honey sauce and grill, turning often and basting with sauce, until cooked through, about 10 minutes. Serve with rice, if desired.
