Hot seafood soups like clam chowder and fisherman’s stew are classic American standbys. But cold fish soups? Not as common in these parts. In fact, while researching this article, I couldn’t acquire a single cold fish soup recipe to test out from my arsenal of foodie acquaintances. No one had ever even heard of such a thing! Fortunately, international cuisines have long been enjoying cold variations of soups. And Latin regions in particular have mastered the preparation of cold soups that accentuate seafood.

As I delved into recipe testing, it became shamefully clear that my lack of chilled fish soup experience was a culinary mishap. These easy and delicious soups pack a punch of flavor and keep you feeling refreshed during the sweltering summer months. I borrowed a few classic chilled soup recipes from Mexican and Spanish cuisine, added some Sarasota locavore favorites (bottarga and mango, for example), and created three chilled fish soup recipes ready to steal the show at your next summer soiree.
