Blueberry Gratin

Preheat oven to 410°.

Delicious plain or with a scoop of vanilla ice cream.

With an electric beater, beat butter and sugar until light and fluffy.

Continue beating, adding the eggs one at a time, followed by the cream cheese and vanilla, and beating until smooth.

Add the almond powder/meal and blend well. Gently fold in the blueberries.

Turn batter into a 9 inch baking dish. Bake for 25 minutes. Top will be golden brown and the gratin will be moist and yummy! Serve warm or room temperature.

  • 4 ounces butter at room temperature
  • 1 cup sugar
  • 2 eggs
  • 4 ounces cream cheese
  • 1 teaspoon vanilla
  • ¾ cup finely ground almonds (also called almond powder (or almond meal)
  • 1 pint fresh blueberries
