Blueberry Danish

Ingredients

Dough
  • 1 teaspoon sugar
  • 1/2 cup warm water
  • 2 1/4 teaspoons yeast
  • 4 cups flour
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 3/4 cup cold butter
  • 3 eggs
  • 1/2 cup heavy cream
Filling
  • 2 cups fresh blueberries
  • 1/3 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
ICING
  • 1 1/2 cups powdered sugar
  • 1 tablespoon melted butter
  • 1/2 teaspoon vanilla
  • 3 tablespoons milk

Preparation

In a small bowl, dissolve sugar into warm water and sprinkle yeast on top. Let stand for 10 minutes.

In a food processor, mix together flour, sugar, and salt. Add butter and pulse till you see pea-sized chunks in flour mixture. Do not over-mix.

In a large bowl, whisk together eggs and cream. Add the yeast mixture and stir to combine. Pour in the flour mixture and, using a wooden spoon, mix until a dough is formed. Divide dough in half and wrap in plastic wrap. Place dough in the refrigerator to rest for at least 6 hours (overnight is better).

On a lightly floured surface, roll out dough to a 12- by 18-inch rectangle. Cut into approximately 36 (1/2-inch) strips. Twirl 2 strips together and then form into a spiral and place onto a parchment-lined baking sheet. Repeat. Loosely cover dough and allow to rise for 30 minutes. Preheat oven to 375°F.

In a saucepan, combine blueberries, sugar, cornstarch, lemon zest, and lemon juice. Slowly bring mixture to a boil (about 15 minutes). Mash 1/3 of the mixture with a potato masher or the back of your spoon. Set mixture aside to cool.

After dough has risen, gently make an indentation in center of each Danish using bottom of small measuring cup or measuring spoon. Add 1 tablespoon of blueberry filling to center of each Danish. Bake for 15–18 minutes; cool completely.

In a small bowl, mix together powdered sugar, melted butter, vanilla, and milk. Drizzle over cooled Danish.

About this recipe

Tip: You can freeze 1/2 of the dough for later use. Just thaw and follow directions.
